Chewy Raisin and Saffron Cookies Keshmeshi

This is a delicate and chewy cookie flavored with saffron and studded with raisins. It's a traditional Iranian cookie called keshmeshi. Keshmeshi are raisins in Farsi. The cookies are made with chickpea flour, a traditional Iranian baking ingredient, so they are gluten free and very light.
