Sumac is a staple of any Iranian table, as kabob must be served with a  shaker of tart, salty sumac to lighten the richness of the meal. Sumac is also an excellent marinade ingredient and tenderizer, and makes a pretty, lemony garnish for serving chicken and fish. This sumac is salt-cured rather than dried and ground like commercially available sumac, so it has a consistency of large, moist, clumpy flakes rather than a uniform, machine made powder. This sumac is so full of citrusy flavor that just smelling it makes your mouth water. Try it as a flavorful salt rim for cocktails!
