Pomegranate Walnut Chocolate Chunk "Fesenjan" Cookies

Plump and sticky dried pomegranate seeds meet chopped walnuts, chunks of chocolate, and flecks of coarse salt in this Persian riff on classic chocolate chip cookies. This is a slightly chewy cookie with lots of texture and bright pops of fruity pomegranate. It's inspired by the combination of walnut and pomegranate in the famous Persian stew fesenjan. These cookies are gluten free.
